An exciting opportunity has become available for a capable bar manager to lead a team, overseeing 2 bars in a multi-level rooftop & cocktail bar.  You will report to the venue manager and be responsible for key aspects of the bar:

• Full control of beverage department including menu creation - no contracts locked in and freedom to make changes within reason.
• Conduct weekly stocktakes and analyse variance reports.
• Control/oversee purchasing targets based on allocated spending and upcoming events.
• Work in conjunction with functions co-ordinator and floor supervisor to execute successful running of events.
• Rostering of staff and maintaining wage control percentage.
• RSA compliancy at all times.
• Cash up and reconciliation.
• Deemed competent with Microsoft Word and Excel.
• Oversee recruitment of FOH, bar staff and bussy’s.
• Ensure drinks consistency and presentation of drinks is kept to high standard.
• Liaison with supply reps and running of incentives and weekly/monthly specials.
• Implementing spirit/beer/wine training program on monthly basis.

The successful candidate will have: 

• experience in high-end cocktail bars. 
• exceptional product knowledge in mixed drinks & spirits, and a sound understanding of craft beers and wines. 
• be a natural team leader and trainer 
• a great attitude - self-motivated and passionate about bars and drinks service. 
• the ability to write, cost and implement menus, 
• experience in cash handling, balancing, POS systems, stocktaking and purchasing preferred but not essential - training can be provided.
